Go-To Dinners are those dinners that are fast and easy – and hopefully something your family likes.
Here’s one of my “Go-To” Dinners – Chicken & Potato Teriyaki. I serve it with green beans. The boys love this one.
4 medium potatoes
4 boneless, skinless chicken breast halves (about 2 lbs.)
1 Tablespoon coconut oil
½ cup sliced green onions with tops (optional)
1/2 cup prepared teriyaki sauce
Cut and start your green beans. I steam mine. Takes 15-20 minutes. A little butter and some pink sea salt and they’re great!
Microwave potatoes 8 – 10 minutes, until tender, but not mushy. a little harder than you would for a baked potato, otherwise they will fall apart then you try to mix them.
While potatoes are cooking, season chicken liberally with garlic powder and brown in oil over high heat, about 5 minutes per side.
You can either cut the chicken into cubes, or shred in a bowl with 2 forks. It seems to go farther shredded.
Cut potatoes into 1 inch cubes. I don’t peel them. Add to pan.
Add onions if using and teriyaki sauce
Toss until heated through.
