Fajitas are great food, but the vegetables can make a sandwich or a wrap come alive!
Last weekend, I had fajitas on Friday night. On Saturday night, Italian Beef sandwiches.
On Sunday, I had some fajita vegetables and some Italian Beef left over. I mixed them together on a tortilla with cheese, and it was a wonderful wrap! I ate 4! So Good!
Here’s how to make the fajita vegetables –
Fajita Vegetables
3 tablespoons fresh lime juice,
2 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons extra-virgin olive oil
freshly ground black pepper
2 red bell peppers, cored, seeded, and thinly sliced lengthwise
2 green bell peppers, cored, seeded, and thinly sliced lengthwise
2 large onions, peeled and cut into wedges, then separated into strips
Grill the vegetables on a grill pan, or stir fry in a skillet over medium high heat until vegetables are crisp-tender (not mushy). I actually like mine on the soft side, but not mushy.
Another tough one, ey? 😉
And all of it is good for you! We even eat these as a side dish.
